{ Cowboy Chili }


I used to just call this Chili, but then I married a New Mexican who called several different dishes "Chile" so I had to rename this one so my family knew which one I was talking about. This is similar to the chili you can buy in a can, only better. Here we go:

I browned one pound of ground meat. I usually use beef for this, but I have a freezer full of elk right now, so elk it is.

Add:
1 small onion, diced
2 cloves garlic, minced
Cook until onions are translucent then add:
2 cans pinto beans
1 can red kidney beans
1 can diced tomatoes
1 can tomato sauce
2-3 TBS Chile powder (I use the New Mexican type so there are no other spices in there)
2 tsp Mexican oregano
1/2 tsp cumin
1 tsp pepper
salt to taste


Simmer for half an hour or so to combine flavors. I like a lot of spice in mine so I will even add more spices. You can add Tobasco to make it even spicier. You be the judge and put in what you like.

Serve in a bowl with corn bread or over mashed potatoes. Sprinkle grated cheese, chopped onions and sour cream on top if you like.

If you don't like or can't eat tomatoes, substitute the tomato sauce and diced tomatoes for two cans of Golden Mushroom Soup. It's easy and delicious.
