{ Green Chile Corn Chowder }



I love me some corn chowder. The green chiles are really optional, but they make this soup in my humble opinion. I started by melting 2 TBS butter in a pan, then adding:
1 small onion, diced
3 cloves garlic, crushed
and cooking until translucent.
I put the onion mixture in my Blendtec with:
3 cups corn kernels (I use defrosted frozen corn)
1 TBS cornstarch
1 1/2 cups milk
Blended until smooth and then strained back into the original pot. Brought to a boil and added
1 1/2 cups milk
4 large roasted green chiles, deseeded and diced
1 cup corn kernels
1 1/2 tsp salt
Then I reduced the heat and simmered until thickened.
