Creole Jambalaya
This stuff is so good! Make this jambalya and take a trip to New Orleans in your kitchen. Such a rich and delicious stew with chicken, andouille sausage and shrimp, it's so satisfying, you don't need anything else for this meal. Some corn bread or a nice baguette will finish it off nicley.
Heat on medium heat:
2 Tbs olive oil
Add and brown:
1 chicken breast cut into 2 inch cubes (½ lb)
1 lb andouille sausages, sliced
When brown, add:
1 jalapeno, finely diced
1 large diced bell pepper
1 medium diced onion
2 ribd diced celery
When vegetables are ])translucent, add and cook for 2 minutes:
4 cloves garlic, pressed
Add and bring to simmer:
14 oz crushed tomatoes
3 cups chicken broth
Add seasonings:
1 bay leaf
1 tsp thyme oregano
1 tsp salt
½ tsp pepper
¼ - 1 tsp cayenne (1 tsp is very hot)
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Ten minutes before serving add:
1 lb raw shelled deveined shrimp.
Cook until shrimp is pink and serve over rice. If you have a quart of chicken broth, use the leftovers to substitute for part of the water in the rice.
